Burgundy – Reductio ad Absurdum
Some say Burgundy is a very complicated wine region of France to understand. We will debunk that notion and “reduce it to the absurd” or simplify it completely. This Mondiale function will be part lecture and mostly Bourguignon Degustatione. We will cover all regions of Burgundy, starting with a tasting of three regions: Maconnais (Pouilly Fuisse, Chateau Beauregard 2013); Cote Chalonaise (Mercury “Clos du Roi” 1er Cru 2017), and anywhere Bourgogne (Aligote Defaix 2018), accompanied with french bread and a selection of cheeses. Then we will get into some serious Burgundian Cuisine with more serious Burgundy wine.
First Course: Escargot Bourguinone with Premier Cru Chablis “Cote de Lechet” 2014
Second Course: Magret de Canard au Pommes Frites with Chassagne Montrachet 1er Cru, “Les Chambres” 2015 (Cotes de Beaune)
Third Course: Boeuf Bourguignon with Nuits Saint Georges 1er Cru “Aux Boudots” 2011 by A Verdet, (Cotes de Nuits)
Dessert: Tarte Tatin with Cremant de Bourgogne Brut, Domaine de la Grande Cote
Nota Bene: I am purposely omitting the Burgundy Region of Beaujolais for another Dinner.
