The April, 2001, inaugural trip to French Louisiana in honor of l’Académie Gastronomie Brillat-Savarin was a week-long adventure into the spirit of Acadiana that featured world-class cuisine, Cajun and Zydeco music, mysterious swamps, authentic folklife attractions, and infectious joie de vivre.
