aiseki cuisine originated in Old Imperial Kyoto and is the name for formal Japanese dining. It is an ever-changing menu, made to order and designed to suit the season, which is noted not only for the unique taste of each delicacy but also for its presentation. As Hyatt’s Food and Wine Director, Paul Ohm, explained, this stylized and ritualistic cuisine is extremely time consuming in its artistry. In fact, the Hyatt brought in four visiting chefs to assist Sacramento’s Master Chef Master Chef Masa Nishiyama with the dinner.
